You might just usually order Thai food from local Thai restaurant. But you can try to make the fresh pad thai at home! So.. Let’s start!
1. PAD THAI SAUCE INGREDIENTS
- 8 pitted medjool dates
- 1 tbsp vegan oyster sauce
- 1 tbsp rice wine vinegar
- 1 tbsp low-sodium soy sauce
- 1 lime, juiced (about 1 tbsp)
2. INGREDIENTS
- 250 g flat rice noodles
- 100g medium firm or firm tofu
- 2 tbsp coconut oil
- 1 onion
- 1 carrot
- about 2 to 3 cloves garlic
- broccoli
- few bean sprouts
- finely chopped cilantro
- roasted salted peanuts
3. Instructions
3-1. Sauce

Place medjool dates in a bowl in warm water to soak for 10 minutes.
- Remove seeds. Put into Vitamix and add with vegan oyster sauce, rice wine vinegar, low-sodium soy sauce
3-2. Tofu

Cut Tofu into cubes and fry with coconut oil
- Heat the pot with coconut oil and stir fry tofu until brown.
- Add the 20% of sauce
3-3. Noodle

Bring a pot to boil the noodles.
3-4. Mix time
- Heat another pot with coconut oil and add onion, garlic for 2 mintues, and add all veggies (Carrots, sprouts) for another 5 minutes.
- Then add in broccoli 4 to 5 minutes
- Add in 40% of sauce.
- Add the noodle, Tofu in and add the rest of sauce.
